Chocolate Chip Pumpkin Bread

Pumpkin Bread (Half Batch)

  • 3 eggs

  • ¾ cup oil

  • 1 ½ cups sugar

  • 1 ¼ cups pumpkin (about half of a 15 oz can)

  • 1 ½ tsp baking soda

  • 1 ½ tsp baking powder

  • ½ tsp salt

  • ½ tsp cinnamon

  • ¼ cup nuts (optional)

  • 2 ¼ cups flour

  • 3 oz (about ½ cup) chocolate chips

Directions

  1. Mix ingredients in order.

  2. Grease and flour pans.

    • This half recipe will make:

      • 2 loaf pans (½ full each) OR

      • 1 bundt pan OR

      • 1 full loaf pan

  3. Bake at 350°F for about 40 minutes (check for doneness with a toothpick, since bake time may vary depending on pan size).
