Date Night Clams in White Wine Sauce
After a long, busy week, my husband and I decided we needed a quiet night at home, just us, good food, and a glass of wine. We always talk about making clams at home because they’re one of our absolute favorites, but somehow, it never happens. Well, this time, we did it. And let me tell you, it was so worth it. The clams were tender, the wine sauce was divine, and we found ourselves soaking up every last drop with toasted bread. Simple and satisfying!!
Ingredients:
2 lbs fresh littleneck clams (scrubbed and rinsed)
4 tablespoons olive oil
4 cloves garlic, thinly sliced
1 small shallot, finely chopped
1/4 teaspoon red pepper flakes (adjust to taste)
1 cup dry white wine (like Pinot Grigio)
Juice of 1 lemon
1/4 cup fresh parsley, chopped
Salt & pepper to taste
Soft and crunchy baguette, for serving
Instructions:
Prep the Clams:
Scrub the clams under cold water to remove any grit. Discard any that are open and don’t close when tapped.Sauté the Aromatics:
In a large, deep skillet, heat the olive oil over medium heat. Add the garlic, shallots, and red pepper flakes, sautéing until fragrant—about 2-3 minutes. You’ll know it’s perfect when the kitchen smells like an Italian seaside café.Add the Wine & Clams:
Pour in the white wine and bring it to a simmer. Add the clams, cover the skillet with a lid, and let them steam for 5-7 minutes until they open up. Give the pan a little shake halfway through. (Discard any clams that don’t open.)Finish with Lemon & Parsley:
Once the clams are cooked, squeeze in the fresh lemon juice, sprinkle with chopped parsley, and season with salt and pepper to taste.Serve & Enjoy:
Transfer the clams and that beautiful, fragrant broth to a large bowl. Serve immediately with slices of bread to soak up all that garlicky, wine-kissed goodness.
