Corn, Black bean and Feta Salad
When the weather warms up I always create this go-to salad for hosting friends over. The combination of corn, black beans and feta is addicting. It’s a super easy side or starter to make with pantry staples. Truly, it takes 10 minutes. Here’s how to make it.
I got this recipe from one of my best friends Leigh and I believe it is adapted from Cooking Light Magazine.
Serve with chips, tortillas or almond flour crackers.
Ingredients:
1 cup fresh scallions chopped thin
2 cups sweet corn (fresh or canned or frozen— whatever you have!)
1/2 tsp garlic powder
1 tbsp honey or agave
Salt/pepper to taste
1 tbsp olive oil
1/4 cup champagne, white wine or red wine vinegar- you really can’t mess it up!
1/2 cup Feta cheese
1 can black beans-rinsed
Instructions:
Mix black beans, corn, feta and scallions in a bowl
Mix garlic powered, honey, olive oil, vinegar in a mixing cup or separate bowl to create a dressing
Toss the black bean, corn, feta and scallions with the dressing
Serve with chips or crackers!
